A Northern Greek Specialty // Corn Bread with Leaks and Feta
Ingredients:
1 cup Corn Meal
2 cups of chopped Leeks
1 cup hot water
2 ½ cups of crumbled Feta cheese (Roussas or Dodoni preferred)
3 Eggs
Extra Virgin Olive Oil (EVOO)
2 tsp. Baking Powder
Ground Black Pepper to taste
Prep:
Preheat oven to 350 degrees
In a large skillet cook the leaks for about 15 minutes with a little bit of EVOO and then let cool.
Mix the cornmeal and the baking powder together and add it slowly to the bowl of water stirring to combine. Once fully combined add the feta, leaks, eggs and black pepper until well combined.
Add the mixture to a buttered pan and bake for about an hour brushing some EVOO on top half way through.
Let it cool to room temperature, cut into squares and serve
